Kimchi Penne

In 2022, with the Korean chef Juliette JU, aT Paris developed vegan-oriented recipes to provide the chance to enjoy the Korean food in a healthier and sustainable way. We developed the total 8 recipes : 2 entrees, 4 plats, 2 desserts. You can discover all of this video at our playlist of the vegan recipes!

INGREDIENTS

    – 200g penne
    – 100g kimchi
    – 2 garlic cloves
    – 50g onions

    Sauce :
    – 2 teaspoons de Gochujang (chili paste)
    – 1 tablespoon de Ganjang (soy sauce)
    – 1 teaspoon sucre
    – 1 teaspoon Gochutgaru (chili powder)
    – 100g single cream

    – Coriander
    Chamgireum (sesame oil)

PREPARATION
1.

Cook the penne and drain.

2.

Make a sauce in a bowl by adding Gochujang (chilli paste), Ganjang (soy sauce), sugar and chilli powder.

3.

Chop the kimchi, sauté the chopped onions and chopped garlic cloves in a hot pan, add the kimchi.




4.

Keep cooking without coloration.

5.

Add the sauce to the pan with kimchi then add the liquid cream then add the penne.

6.

Chop the cilantro and serve with the penne.

Juliette JU is a professional chef who can explain Korean food with touch of France with the diverse experiences in the kitchens of the Bristol, Joël Robuchon and the Park Hyatt Paris Vendôme. She was also a French cooking teacher at the Cordon Bleu, and she opened her own restaurant OCTAVE in paris.
