– 1 Chicken
– 2 cloves Garlic
– 2~3 Chinese red dates
– 100g Glutinous rice approx.
For stock
– 1 root Ginseng
– 1 Spring onion
– 3 cloves Garlic
– 10g Ginger
– Black pepper
– Water
– Salt
For garnish
– Spring onions
Remove as much fat, interior and chicken blood as possible.
Put glutinous rice in water about 30 min to soak then drain well
Stuff soaked glutinous rice, garlic, Chinese dates with a pinch of salt and seal well
Put prepared chicken, garlic, ginger, spring onion, ginseng, peppercorns into the pot, season with a pinch of salt and cover with enough water to cover all ingredients
Bring to the boil and lower the heat, simmer about 45~60min, depends on size of chicken
Place cooked chicken in a bowl with drained stock, garnish with thinly sliced spring onions accompanied with salt and pepper as seasoning
