. 250 gr egg noodles
. 1 jar of mungobean sprouts
. 400 gr pork
. 1 carrot
. 1 red onion
. 2 tbsp soy sauce
. 3 tbsp nuoc-mam (fish sauce)
. 2 tbsp vegetable oil
. 1 garlic clove
. Little bit of coriander
. White pepper
Cut the pork in fine slices.
Wash and strain the green soybeans.
Julienne the carrot. Chop the garlic, onion and coriander.
Cook the noodles following the label instructions. When they’re done, wash them under cold water to stop the cooking process.
In a wok with large rims, heat the oil and sauté the pork slices and the onion for 5 minutes.
Add carrots, soy sprouts, garlic, nuoc mam (fish sauce), soy sauce, pepper, mix everything, put a lid on and let it cook for 10 minutes on low heat.
Strain the noodles, add them to the preparation, mix everything.
Serve it with light sprinkles of coriander.
