Patatas bravas with Kimchi

Korean-Spanish fusion tapas with kimchi 

INGREDIENTS

    For the potatoes

    • 3 small potatoes
    • 1 liter of olive oil
    • a handful of salt

     

    For the brava sauce

    • 1 onion
    • 2 cloves of garlic
    • 1 tablespoon of olive oil
    • 1 teaspoon of sweet paprika
    • 1 teaspoon of gochugaru (Korean pepper flakes)
    • 1 tablespoon of flour
    • 150 ml of white or rose wine
    • 100 ml of water
    • A pinch of salt

     

    For the kimchi mayonnaise

    • 1 egg
    • 150 ml of sunflower oil
    • 150 ml olive oil
    • 1 can of korean kimchi
    • A pinch of salt
PREPARATION
1.

Boil salted water, and spaghetti once it’s boiling.

 

2.

Cut kimchi into small pieces.

 

3.

Bake the bacon in a pan with a little olive oil.

 




4.

Cut the bacon into bite-size pieces and fry it with kimchi.

 

5.

Add the cooked spaghetti noodles in the pan and keep stir-frying.

 

6.

Turn off the heat and cool for at least 3 minutes, then add the yolk and mix.

 

7.

Sprinkle parmesan and/or pepper.
